It can be produced in many styles, from dry with\u003c\/p\u003e\n\u003cp dir=\"ltr\" style=\"line-height: 1.38; margin-top: 0pt; margin-bottom: 0pt;\"\u003ebarrel-aging to fruity and sweet. Today, Dornfelder is considered a German red wine\u003c\/p\u003e\n\u003cp dir=\"ltr\" style=\"line-height: 1.38; margin-top: 0pt; margin-bottom: 0pt;\"\u003eclassic.\u003c\/p\u003e\n\u003cp dir=\"ltr\" style=\"line-height: 1.38; margin-top: 0pt; margin-bottom: 0pt;\"\u003eWinemaking\u003c\/p\u003e\n\u003cp dir=\"ltr\" style=\"line-height: 1.38; margin-top: 0pt; margin-bottom: 0pt;\"\u003eThe grapes are pressed and then remain in contact with the free-run juice to extract the\u003c\/p\u003e\n\u003cp dir=\"ltr\" style=\"line-height: 1.38; margin-top: 0pt; margin-bottom: 0pt;\"\u003edesired amount of color and tannin. As this variety inherently offers deep color, this\u003c\/p\u003e\n\u003cp dir=\"ltr\" style=\"line-height: 1.38; margin-top: 0pt; margin-bottom: 0pt;\"\u003emaceration process typically lasts only a few days, with the fermentation process\u003c\/p\u003e\n\u003cp dir=\"ltr\" style=\"line-height: 1.38; margin-top: 0pt; margin-bottom: 0pt;\"\u003elasting between seven to 10 days.\u003c\/p\u003e\n\u003cp dir=\"ltr\" style=\"line-height: 1.38; margin-top: 0pt; margin-bottom: 0pt;\"\u003eThe wine then goes through a secondary – malolactic – fermentation, which helps\u003c\/p\u003e\n\u003cp dir=\"ltr\" style=\"line-height: 1.38; margin-top: 0pt; margin-bottom: 0pt;\"\u003esoften the wine. After 10 to 14 days, the wine is racked off the lees and a week or so\u003c\/p\u003e\n\u003cp dir=\"ltr\" style=\"line-height: 1.38; margin-top: 0pt; margin-bottom: 0pt;\"\u003elater, racked off again – but not yet filtered – into large traditional wooden barrels,\u003c\/p\u003e\n\u003cp dir=\"ltr\" style=\"line-height: 1.38; margin-top: 0pt; margin-bottom: 0pt;\"\u003ewhich vary in size from 600 - 3,600 liters. After 30 - 90 days the wines are filtered\u003c\/p\u003e\n\u003cp dir=\"ltr\" style=\"line-height: 1.38; margin-top: 0pt; margin-bottom: 0pt;\"\u003eand placed into stainless-steel tanks until bottling.\u003c\/p\u003e\n\u003cp dir=\"ltr\" style=\"line-height: 1.38; margin-top: 0pt; margin-bottom: 0pt;\"\u003eTasting notes\u003c\/p\u003e\n\u003cp dir=\"ltr\" style=\"line-height: 1.38; margin-top: 0pt; margin-bottom: 0pt;\"\u003eDeep in color - nearly opaque - with brooding shades of dark purple. It exhibits rich\u003c\/p\u003e\n\u003cp dir=\"ltr\" style=\"line-height: 1.38; margin-top: 0pt; margin-bottom: 0pt;\"\u003eplum and blackberry flavors and is quite mellow, with very little in the way of tannins,\u003c\/p\u003e\n\u003cp dir=\"ltr\" style=\"line-height: 1.38; margin-top: 0pt; margin-bottom: 0pt;\"\u003ebut, nonetheless, quite generous. The sweet fruit fills the mouth and continues through\u003c\/p\u003e\n\u003cp dir=\"ltr\" style=\"line-height: 1.38; margin-top: 0pt; margin-bottom: 0pt;\"\u003ethe finish.\u003c\/p\u003e\n\u003cp dir=\"ltr\" style=\"line-height: 1.38; margin-top: 0pt; margin-bottom: 0pt;\"\u003eVery pleasant, slightly chilled - as an aperitif. Also try with sausage and peppers and\u003c\/p\u003e\n\u003cp dir=\"ltr\" style=\"line-height: 1.38; margin-top: 0pt; margin-bottom: 0pt;\"\u003eor with honey-roasted ham. Grilled pork and lamb are also a good bet, but for\u003c\/p\u003e\n\u003cp dir=\"ltr\" style=\"line-height: 1.38; margin-top: 0pt; margin-bottom: 0pt;\"\u003esomething special serve with Chicken or Lamb Tagine.
