Governo is the wine making technique (invented in Tuscany in the 14th century) where part of the grape harvest is dried ('parziale appassite') and added to the fermenting wine later ('ripassere'). This adds an extra boost to the yeast, increases malo-lactic fermentation, stabilizes the wine and brings the fruit back on the nose. Old vine sangiovese (70%), Merlot (20%) and Cabernet Franc (10%) are aged in both American and French oak barrels and mixed with this partially dried fruit. Notes of forest fruits and cherries with balanced tannins. Easy to drink on its own or pair with feathered game and rich mushroom dishes.

An interesting wine made in an unusual manner. Old vine Emilia-Romagna sangiovese is blended with the ancient indigenous variety Uva longanesi. Part of the harvest is dried - 'parziale appassite' prior to pressing and oak aging in French barriques. This gives a similar depth of flavour found in Amarone i.e. full bodied with little acid. Easy to drink on its own or pair with feathered game and rich mushroom dishes.

An unusual bottle (very heavy 2.2 kg and tall 340 mm) and an unusual wine is inside. PN means 'first native' and reflects the grapes (collection - collezione) used in the wine, i.e. Primitivo (zinfandel) and Negroamaro from the heel of Italy. A blend of these two varietals makes a superb wine, the big and heavy rustic primitivo is tempered by the perfumed and earthy negroamaro, softening and balancing the tannins. The bouquet is complex and the wine full bodied with notes of mature red fruits. Ideal with red meats or mushrooms based dishes.

Made from 50% of their Sangiovese (which is used in other wines from the estate), blended with 50% of 'Gratena Nero' which is a variety of red wine known only to this estate and was established as a unique variety by a Milan University Professor of Agriculture and oenology in 2010.
