2021 BLANKbottle But Why Cabernet Sauvignon, from the high‑altitude Ceres Plateau, is one of Pieter Walser’s most strikingly pure and linear Cabernets. The elevation and extreme diurnal shifts give the wine a cool, chiselled profile—far more mountain‑Cabernet in feel than coastal South Africa.
Aromatics - A lifted, precise, almost alpine nose showing: Blackcurrant, cassis, and mulberry. Redcurrant and cranberry brightness. Dried herbs, fynbos, and a touch of mint leaf. Graphite, pencil shavings, and crushed rock. Subtle hints of cedar and cocoa nib. The perfume is cool, focused, and mineral—very much shaped by altitude.
