Aroma - Bright, saline and quietly complex. Lemon peel, green apple and quince sit alongside chamomile, crushed stones and a faint nutty note. A whisper of sea spray and flor‑like savouriness hints at the grape’s sherry heritage.
Palate - Lean, textural and beautifully mineral. Citrus pith, pear skin and white peach glide over a taut, almost chalky frame. There’s a subtle oxidative nuance — almond, hay, dried citrus — giving depth without heaviness. The acidity is crisp and linear, driving a very clean, dry profile. Light‑bodied, bone‑dry and saline. High acidity, low alcohol feel, and a fine phenolic grip that adds shape and gastronomic appeal.
Finish - Long, stony and savoury, with lingering lemon zest, almond skin and a gentle herbal lift.
