Critic tasting note: "Down in Tasmania they're about to start distilling a corn mash whiskey and a triple distilled Irish-style one, and here farmer and sand and ice sculptor Peter Bignell is using his own rye to distill spirit on a still he built himself. This is new white spirit made with 100 percent rye and bottled at 40%. It's more pastis than whiskey, a soft licorice and aniseed alcopop which is way too drinkable.

Style: Unaged rye spirit — bright, spicy, herbal, and wildly characterful
Appearance - Crystal clear, bright, and oily — classic unaged rye spirit.
Nose - Licorice root, aniseed, and fennel pollen. Grassiness, earth, warm cereal. A soft sweetness — icing sugar, vanilla beanmint, lemon balm, crushed coriander seed. A faint peppery prickle from the raw rye spirit. Aromatic, herbal, and surprisingly inviting.
Palate - Aniseed, pastis, and sweet herbal liqueur notes white pepper, ginger, cracked coriander. Soft sweetness — vanilla sugar, marshmallow, barley syrup. A creamy, almost silky texture despite being unaged. Subtle earthy grain character grounding the sweetness. It’s playful, bright, and dangerously sippable.
