Caol Ila 12 Year 43% abv 2010s

Appearance : pale yellow.

Nose : lush peat, sea spray and smoke. White almond, ash and liquorice.

Palate : oily and slightly medicinal, it becomes increasingly smoky and fruity.

Overall : floral and herbaceous, prominent s of peated barley with a soft touch of praline and mocha. Fresh, minerally and satisfying.

Colour: White wine/straw.

Nose: Yeasty/porridgy, leaven, beer… ashes and coal smoke, touches of manure, dried kelp, seawater… And a little fresh butter. A very ‘natural’ version that just smells ‘Islay’

Mouth: Very nice attack, salty, with some personality, smoked aubergines. Oysters and tart apples…

Finish: Medium long, even saltier, briny, with good peat. Comments: The profile is pretty perfect in my opinion.
